Cilantro Cashew Dressing



  • 1 cup cashews, soaked overnight, rinsed and drained
  • 1/2 cup water
  • 2 tablespoons cider vinegar
  • 2 teaspoons dried mustard
  • Juice of 1 lemon
  • 2 cloves garlic
  • 1 piece jalapeno pepper, seeded
  • 1 handful cilantro
  • Herbamare Seasoning, to taste


Step 1

Blend everything until very, very creamy. Add additional water if you want a thinner sauce.

Step 2

Taste and adjust seasoning as desired.

Additional Information

Cilantro, also known as coriander, Chinese parsley or dhania, contains an abundance of antioxidants, which can delay or prevent the spoilage of food seasoned with this spice. It also is an excellent source of vital vitamins and minerals.

Chemicals derived from cilantro have antibacterial activity against Salmonella choleraesuis, and this activity was found to be caused in part by these chemicals acting as non ionic surfactants.

Cilantro has also been documented as a traditional treatment for diabetes. A study on mice found coriander extract had both insulin-releasing and insulin-like activity.
